Instant Chia Spinach Cheese Pancake Recipe

Pancakes do not have to be sweet all the time so change it up with this savory chia pancakes recipe. A healthy savory whole wheat spinach pancake with a sumptuous cheese. These are best to make for kids and women's due to ample amounts of Iron, Protein, Omega fatty acid, calcium, phosphorus, magnesium and much more of a good source of vitamins and minerals. A great option for breakfast, brunch or even to pack for tiffin. Healthy, packed with nutrition and without compromising on taste. So, here I am sharing you two different recipes with or without vegan. These pancakes are light and fluffy and are quite quick and easy to make. Let's start with non-vegan recipe.
Whisk the eggs until frothy, then add milk, curd, oil, water, cheese, chia seeds and whisk until smooth.
Combine all the dry ingredients - whole wheat flour, blackpepper powder, nutmeg powder, turmeric powder, baking powder, baking soda and add to the egg mixture.
Add the spinach and blend well. Set aside until.
Then heat a frying pan and pour a lightly few drops of oil or butter. Pour some batter into an oiled pan to form a thin pancake.
Cook on each side until golden brown. When bubbles are coming through the batter, that's the time to flip them over.
Transfer it to a plate and serve hot.
Eat and enjoy !
For a vegan option, simply use coconut oil and almond milk or coconut milk or soy milk or any of your favourite non-dairy milk and vegan curd or yogurt.
For a gluten free you can replace wheat flour with chickpea flour or coconut flour.
To enhance more savoury flavour you can add 1 tablespoon of ginger-garlic-green chilli paste.
Choose oil over butter in a batter. Oil tends to make in superior even texture with more loftier, and stay moist and tender.
How to make
1 cup Spinach, freshly chopped
¼ cup of Chia Seeds
½ cup of whole wheat flour
1 cup milk
2 tbsp water
1 tbsp any vegetable oil
½ teaspoon pink himalayan salt/ rock salt
½ teaspoon blackpepper powder
½ teaspoon nutmeg powder
½ teaspoon of baking powder
½ teaspoon of baking soda/ eno
A pinch of turmeric powder
100 grams of hung curd (option)
100 grams of grated cheese
Oil/ Butter for frying.
